Lentil Soup
Lentil SoupPre-cooked and
canned soups do fill the supermarket shelves, however, for a really
good tasting and a meal all by itself, Lentil Soup fits the
description. Lentils are
grown extensively around the Mediterranean regions, and Lentil Soup
is prepared in a variety of ways, that I will not tempt to
enumerate. However, and through the years of cooking, I found one of
the simple and easy ways to make this soup, is to cook the Lentils
long enough to get them well done. Along the Lentils, one can add an
inexpensive cut of meat (Beef or Lamb) and cook together for an
extended period of time, then add onion, Swiss Chards and Spinach,
10-15 minutes before end of cooking. So, one option is to use a
Crock-Pot and cook these ingredients for 8-10 hours or try a faster
version as shown below.
